Bullit is the best of all time since Steve McQueen did all the driving himself but for more recent chases it has to be without a doubt Ronin simply because if you watch the scene closely you can actually see Robert Deniro struggling to handle the Torque of the Peugeot

There are some pretty awesome car chase scenes in these Bourne movies - The movies themselves are brilliant imo
