presume George R.R Martin has been sending drafts of the new book to hbo and the producers so they know what will be happening on season 6

Martin gave the producers enough information about the next 2 books to enable them to adapt it for the tv, He told them how it ends - I presume this includes who dies & lives, and other "key" moments.
And it hasn't been renewed for season 7, it's been renewed for 2017 (HBO have deliberately worded it this way). There's some speculation that there's only 12-14 episodes left, how those are split up is still open for debate, its possible that 2017 is season 7 part 1 and 2018 is season 7 part 2.
