Well I say I've been watching it since 1993, thats the first time I saw it on video probably Betamax (Remember them) I was only a youngster at the time so I wasn't a total MMA nut I didn't even know it was MMA, just some dudes having a rumble but it was better than the WWF.
The best I've seen, man thats a tough one but off the top of my head I'd say the early career of Vitor Belfort around the late 90's when he came with that charge & flurry of punches that's won him many a fights, I've seen that many shows that it's impossibly to remember most I've seen every event since it was shown on Bravo or at least when I became aware of it on Bravo maybe late 90's??? to be honest I can't remember whan it started on Bravo.
Others that stand out are the first one I saw as I've said Royce Gracie at UFC 1 & Ken Shamrock & Dan Severn, Shamrock was a beast & his submissions were quality & Dan Severn was one of the first wrestlers to compete in MMA, back then most fighters were just fighters so Gracie, Shamrock & Severn came with a totally new set of skills & it was great to watch unlike now where you get 2 wrestlers that just hold eachother for 15min.
Aswell as these I'd say the fights with the brawlers like Tank Abbott & 'Cabbage', Tank was shocking but he was a former bar room brawler Kimbo style so he just used to stand & bang his record is 10-14, 'Cabbage' was pretty much the same but he could take some serious damage to his head to the point of him coining the catchphrase "My head is full of concrete and stuff". He used to celebrate a win by doing the cabbage dance which used to make me chuckle his record is 19-14, 14 KO wins.
Also the UFC 34 fight where Matt Hughes beat Carlos Newton with a slam. Hughes was caught in a triangle choke by Carlos Newton, but Hughes lifted Newton in the air and slammed him to the mat, causing Newton to hit his head and lose consciousness just as Hughes was on the verge of blacking out himself from the choke After the match Carlos stated that he felt the reason Hughes fell to the mat was because he was rendered unconscious from the triangle choke. This was confirmed by Hughes himself upon reviewing the tape of the match Hughes can be heard telling his corner after the fight "I was out
